Came across your blog bc its the "blog of note" and its 3am in Chicago and I'm a line cook on her second day off and I have that stir crazy panic feeling you described...itching to get back to work tomorrow. Anyway, great blog- will continue reading for sure. There is so much comfort in knowing no matter what kitchen it is the cooks are all essentially the same.

Expo: Goddamn it. (Pushes Rachels buzzer). Please tell your table that we are out of the Bass special and apologize that our grill cook can't count to 2.
Rachel: Ohh Kayy.
(Rachel returns)
Rachel: He says he will take the swordfish instead, but wants the vegetable that goes with the bass.
Expo: No can do. No substitutions, you fucking no that.
Rachel: But I thought since we were out of the bass that...
Expo: No. No. Go tell him no fucking substitutions.
Rachel: Ohh Kayyy.
(Rachel leaves.)
Grill: Wait a minute, I found two more bass.
Expo: (Slams fist on to counter, bouncing everything on it 2 inches in the air.)
Expo: (to himself) Jesus fucking christ how fucking hard is to keep your fucking station fucking organized you stupid fucking fuck.
Rachel: The guy wants to talk to a manager.
Expo: FUCK this, fire the fucking bass and tell him we went out and caught him his own fucking fish.
Rachel: ohh kayyy.

I enjoy reading your blog and seeing the photos and videos of life in the kitchen. I was a short order cook in my youth and I managed a pizza/spaghetti family style restaurant in my twenties. I have always liked the life but I it is not the career I chose. Keep up the good work.

I always wonder at people who love cooking who say they want to work in a restaurant, because cooking as a hobby and cooking as a profession has to be TOTALLY different.
